De Eetlijn Borculo,       Bieten-Quinoa Salade

Ontbijt- of lunchgerecht voor 2 personen.

*4 à 5 rode bietjes                                                                                                                                                                                                                                                                                                                              *Olijfolie                                                                                                                                                                                                                                                                                                                                       *Himalayazoet                                                                                                                                                                                                                                                                                                                                       *Peper                                                                                                                                                                                                                                                                                                                                                *100gr gekookte Quinoa                                                                                                                                                                                                                                                                                                                       * 2 sinaasappels

Hoe maak je het klaar?

*Verwarm de oven voor op 200 graden.                                                                                                                                                                                                                                                                                      *Maak de rode biet schoon en leg hem op een stuk aluminiumfolie. Wrijf hem in met olie, zout en peper en pak hem in. Bak hem 45 minuten  tot hij zacht is.                                                               *Laat hem even afkoelen voor je hem uitpakt, schilt en in stukken snijdt. Je kunt ook voorgekookte bietjes gebruiken.                                                                                                                                      *Kook de quinoa volgens de aanwijzing op de verpakking.                                                                                                                                                                                                                                                      *Pel twee van de sinaasappels en snijdt het vruchtvlees in dunnen plakken. Pers de derde sinaasappel uit en meng het sap met wat olie.                                                                                                        *Breng op smaak met zout en peper. Meng alle ingrediënten in een grote kom en serveer warm.
